Preparation: Slow cook for approx 4 hours or until tender. A long pronged fork in and out of the joint without any resistance at all tells you its done. Better to overcook and have it fall apart than undercook it. Best to simmer in water with carrots, celery, onions, peppercorns and bay leaves. Serve hot with fresh bread, English mustard and sweet & sour pickles.
